Is it possible to take bearing out oof a wheel for a 08 wideglide and change bearings to fit an 05 wideglide.

Yes, but you will also need to use 05 the wheel spacers. The 08 wheel has 25mm bearings which are narrower than the 1" bearings in the 05 wheel.
