I'm still a member of the Honda VTX site as this is what I rode previously. These photos show a member there who converted his 1800 to the now-popular dark look.

Seems the only parts not painted were the headlight, half the taillight, reflectors, seat, rotors and possibly the speedo. Its for sale in Salt Lake City, started at $6k, reduced to $4.5k, and is now at $3.8K. He commented that he cannot wash the bike as the paint comes off.

The owner needs the money to start a business, with the members there speculating it is a custom painting operation.

Yep.

Some speculation as to why they were not also painted. Seems that "Vespa Gray" is a popular color among some riders.
