Oil Temp. must exceed the boiling point of water to rid itself of moister and acids that evaporates with it.
If your using 1 of the good synthetics, most will easily handle 275 degrees and some are rated for over 300 degrees.
That's the reason HD oil coolers have a thermostat built into them.
